Badass VGN sandwich

Mondays can be messy but this loaded roasted veggie sandwich is sure to cure the blues. Loaded with healthy fats, nourishing vitamins and minerals, tons of fiber and incredible flavor you can feel good about.

  • Ingredients

    • 2 pieces of your favorite bread

    • 1 portabella mushroom, gilled removed 

    • 1/2 cup large cherry tomatoes

    • 1/2 small avocado 

    • 1/4 zucchini, cut into 1/2 inch medallions 

    • 2 heaping tbsps Fun Sesames Parsley Mint Tahini, plus more for dipping 

    • Lettuce of choice 

    • 1 tsp cumin 

    • sea salt and black pepper to taste

  • Method

    Preheat the oven to 450 degrees and lay out 1 large cookie sheet, lined with non-stick foil, or cooking spray. Lay out your mushroom in one area, tomatoes in another and zucchini medallions. Lightly season with sea salt and black pepper, then add cumin to mushroom. Bake in the oven for 15 minutes and carefully remove from oven. 


    Toast your favorite bread. 


    Stack your lettuce mushroom, tomatoes on one slice. Then add your avocado and zucchini. 


    Drizzle with Fun Sesames and finish it off with another slice of toast.
